The HACCP Accelerator™ · 12-Week Live Coaching Program
HACCP training, built alongside a practising auditor. Finish audit-ready and prepared for certification, in 12 weeks.
Most courses teach you the standard. This one shows you how to apply it in your own business, with someone who audits these systems for a living guiding every step. You cover the full Principles and Application of HACCP, then build and implement the real thing, so you walk into your certification audit ready.
No gaps. No guessing. No starting over.
Why learn from a practising auditor
There is a real difference between learning what a standard says and knowing how it holds up under audit.
Nicole Inwood has spent more than 20 years auditing food businesses across SQF, BRCGS, FSSC 22000 and HACCP. She has conducted certification audits on behalf of globally recognised certification bodies, across food manufacturing, utilities, government and large corporate operations. She has sat on the other side of the audit table hundreds of times.
That experience is what this program gives you. Nicole knows where plans tend to fall apart, which hazards can get missed, and what separates a system that passes from one that does not. When she reviews your work, she looks at it the way an auditor would, because that is what she does. That is the difference between this and a standard training course.
A certificate is not the real goal. A system you can stand behind is.
An audit finding can hold up a contract or unsettle a customer, and rebuilding a system after a failed audit costs far more time than getting it right the first time. The value of doing this properly is not avoiding disaster. It is the confidence of knowing your system is complete, compliant, and genuinely working, so you can explain it, defend it, and trust it.
That is what this program is built to give you.
Where you are now
- Uncertain where to start, or whether your plan is right
- Reactive, and not looking forward to the next audit
- A system on paper more than in practice
- No one to check your work
- Not always sure what comes next
Where you will finish
- Confident your system is compliant
- Audit-ready and in control
- A system that is working in your business
- Every step reviewed by a practising auditor
- Nothing missing, nothing to redo
Is this the same as "Principles and Application of HACCP"?
Short answer: yes, and more.
If your retailer, customer or auditor has told you that you need Principles and Application of HACCP training, this program covers all of it. The full Codex HACCP principles, the preliminary steps, hazard analysis, critical control points, monitoring, corrective action, verification and validation are all here, taught in plain language.
The difference is what you walk away with. A standard two-day Principles and Application of HACCP course teaches you the theory and gives you a certificate of attendance. This program does that, then keeps going. Over 12 weeks you build and implement your own HACCP system, with a practising auditor reviewing your actual documents along the way.
So if you have already trained with Pinnacle, you do not need to go and sit a separate Principles of HACCP course. You have covered the same ground here, applied to your own business. If you are deciding between a short course and this program, the short course gives you knowledge. This gives you knowledge and a finished, audit-ready system.
HACCP training vs a two-day course
| Two-day HACCP course | HACCP Accelerator | |
|---|---|---|
| Covers the HACCP principles | ✓ | ✓ In full |
| Taught by a practising certification auditor | Sometimes | ✓ Throughout |
| You build your own HACCP system | ✗ | ✓ |
| Your documents reviewed before your audit | ✗ | ✓ |
| Templates with Codex HACCP requirements included | ✗ | ✓ |
| Support between sessions | ✗ | ✓ |
| What you finish with | A certificate of attendance | An implemented, audit-ready system and a certificate |
If you only need awareness, a short course is enough. If you need a system that will hold up when an auditor examines it, coaching from someone who runs those audits is a different level of preparation.
How the program works
Each week you receive training modules covering that week's topic in clear, practical language. No jargon, and no theory that does not translate to a real business. Alongside the modules you get templates with the mandatory Codex HACCP requirements already built in and documented, plus guidance on how to adapt them quickly and specifically to your operation.
Then every week you join Nicole for a two-hour live coaching call. You bring your questions, fill the gaps, and make sure you are solid on the content before you move forward. Nobody moves on carrying doubt.
What you cover, week by week

Build the foundation. Understand the regulatory landscape, your legal obligations, and the principles that underpin everything that follows.
9 lessonsThe five preliminary steps of HACCP

6 lessonsFood safety hazards
Identify biological, chemical and physical hazards across your entire process. Understand how to assess significance so nothing gets missed.
23 lessonsThe seven principles of HACCP
Work through the decision tree, set your critical control points, and establish limits that are scientifically sound. Understand the reasoning behind every decision.
10 lessonsPrerequisite programs, operational controls

3 lessonsPRPs, equipment and pest management
Close the gaps that can cause unnecessary audit findings.

Your coach is a practising certification auditor
Most courses teach you the standard. This one shows you how to apply it, in your business, with your team, until it actually works.
Nicole Inwood has spent more than 20 years auditing food businesses across SQF, BRCGS, FSSC 22000 and HACCP. She has conducted certification audits on behalf of globally recognised certification bodies, across food manufacturing, utilities, government and large corporate environments.
She has sat on the other side of the audit table hundreds of times. She knows exactly where plans fall apart, which hazards get missed, and what the difference is between a system that passes and one that does not.
Every client Nicole has personally guided through implementation has passed their audit. That is not a coincidence. That is what happens when someone who audits these systems for a living builds one with you.
When she reviews your work in this program, she is not looking at it as a trainer. She is looking at it the way an auditor would. That is the difference.

Questions before you register
Is this the same as Principles and Application of HACCP training?
Yes, and more. This program covers the full Codex HACCP principles and their application, the same content as a Principles and Application of HACCP course, then goes further by helping you build and implement your own system with an auditor reviewing your work. If you have trained with Pinnacle, you do not need a separate Principles of HACCP course.
Can I get approval from my manager for this spend?
Most participants present this to their manager as a risk-reduction investment rather than a training cost. An audit finding can hold up a contract, and this program is built to make sure your system is sound, with a practising auditor reviewing it every step of the way. A tax invoice is provided, and if you need a short brief to take to your manager, email us and we will send one over.
I do not have 12 weeks of spare time. How does this fit into my week?
The weekly modules are designed to be worked through at your own pace, and the live call is two hours a week. You are building your real system as you go, so the time you spend is time you would need to spend anyway, just with guidance so you get it right the first time.
What if I fall behind or miss a live call?
Every call is recorded and available on demand, so a missed week does not mean a lost week. You also get six months of community access and in-chat support, so if you need to slow down and catch up, the support is still there well after the 12 weeks finish.
HACCP is completely new to me. Will I be out of my depth?
No. The program is built for exactly this. Week 1 starts with the fundamentals and the legislative framework before anything else, and every module is written in plain language with no assumed jargon. Whether HACCP is brand new to you, or you have a system that has never given you confidence, the sequence is designed to meet you where you are.
What happens if I am still not confident by week 12?
You will not move through the program carrying doubt. Every week's live call exists to close gaps before you move to the next module, and Nicole reviews your actual documents, not generic examples. You finish week 12 with a system that has been checked the way an auditor checks it.
Is the payment plan a genuine option?
Yes, and it is priced fairly either way. Pay in full and you save against the total, or spread it across 6 monthly payments of AU$897 if that suits your budget better. Either way you get full access to every module, every live call and every template from day one.
Still have a question? You are welcome to get in touch. Send a message through the contact form, or email Nicole directly at nicole@pinnaclems.com.au.
Finish knowing your system will hold up.
Twelve weeks from now, you could walk into your next audit with a system built and checked by someone who audits these systems for a living. That is a different feeling to hoping you have covered everything.
Places are limited to 20 to keep the coaching personal.
